Make easy chopped, cooked chicken by boiling some chicken tenderloins for 15 minutes until cooked through and seasoning with fajita or chili seasoning before adding to quesadillas. Or use part of a rotisserie chicken or leftover cooked chicken.

Ingredients:
- 4 - flour tortillas
- - butter for spreading
- 1/2 cups - cheddar cheese grated
- 1/8 cups - chicken cooked, chopped
- - salsa for spreading
- - sour cream, tomatoes, avocado, cilantro for garnish
Directions:
Place two of the flour tortillas on a baking pan and spread with a little butter or margarine. Sprinkle chopped cooked chicken pieces around on each tortilla until mostly covered. With a spoon add some salsa on top of the chicken (as little or as much as you prefer). Sprinkle cheddar cheese over all to desired thickness (as cheesy as you like).
Take one of the remaining tortillas and spread a little butter on one side then place the tortilla on top of one of the quesadilla stacks on the baking pan with the butter side up (for browning easily under broiler). Repeat with remaining tortilla.
Place pan in oven with broiler turned on high, and allow to broil for 3-5 minutes or until top tortilla has begun to brown a bit and cheese is thoroughly melted.
Garnish with sour cream, chopped tomatoes, diced avocado, fresh cilantro, or other similar ingredients based on your tastes.
