Serve with syrup, or sprinkle with powdered sugar and lemon juice. Recipe can be scaled easily using ratio of 1 egg : 1/4 c milk : 1/4 c flour. A half batch (1 egg) fits in an 8" or 9" pan; 1 1/2 - 2x batch (3-4 eggs) fits in 13 x 15 pan. Use more pans or bake in batches as needed; adding too much batter makes it flat and thick instead of light and puffy!

- 2 - eggs
- 1/2 cups - milk
- 1/2 cups - flour
- 2 tablespoons - butter
- 2 - eggs

- 2 tablespoons - butter
Directions:
Preheat oven to 425°. Place butter in a 9x13 pan, and leave in the oven until bubbly. While butter is melting, beat eggs and milk in a medium bowl, then add flour and whisk until smooth. Tip the pan to spread the butter, then pour the egg mixture in. Bake for 8-10 min, until puffy and edges are golden.
