Ingredients:
- 8 - duck breasts
- 8 ounces - cream cheese softened
- 8 - jalapeno slices or more, either from a jar or freshly sliced
- 5 ounces - Duck Commander Seasoning Rub (or Cajun seasoning)
- 8 slices - bacon thin
Directions:
Soak the duck breasts in salted water overnight in the fridge.
Heat grill to medium heat.
Cut an opening down the length of each duck breast, along the long side, without cutting all the way through to the other side.
Stuff each breast with some cream cheese and a jalapeno slice (or two). Coat each breast with the seasoning rub and wrap with one slice of bacon. Use a toothpick to secure the bacon in place.
Cook over the open grill until bacon is crispy and cream cheese is starting to ooze out.
Drizzle a little honey over each breast and cook an additional couple of minutes to glaze.
Remove toothpicks before serving.
