Duck L'Orange

Ingredients:

  1. - duck quartered
  2. 2 tablespoons - flour
  3. 3/4 cartons - orange juice
  4. 2 tablespoons - red currant jelly
  5. 2 teaspoons - sugar
  6. - kitchen bouquet

Directions:

Quarter the duck and put in a roasting pan with rack on the bottom. Prick duck with sharp fork in several places.

Place in 300 degree F oven, draining off fat about every 1/2 hour until tender and brown. Put duck pieces aside and remove rack.

Leave only about 2 tablespoons of fat in pan. On medium heat on stove top, stir in flour, orange juice, currant jelly, sugar and kitchen bouquet to brown. Boil for 5 minutes.

Strain gravy and place duck back in roasting pan, skin side down. Cover, heat and serve.
