Drop Sugar Cookies

Ingredients:

  1. 2 cups - Flour
  2. 2 teaspoons - Baking powder
  3. 1/2 teaspoons - Salt
  4. 2 - Large eggs
  5. 3/4 cups - Granulated sugar
  6. 2/3 cups - Vegetable oil
  7. 2 teaspoons - Vanilla
  8. 1 teaspoons - Lemon zest

Directions:

Mix flour, baking powder, salt. Whisk eggs, sugar, oil, vanilla and lemon zest well. Stir into dry mix. Blend well. Chill for 30 minutes.

Drop 1 teaspoon cookie dough on oiled cookie sheets, 2" apart. Press dough flat. Dip small glass in water, then dip in sugar. Press lightly on dough. Bake at 400° for 8 minutes. Watch to ensure cookies are lightly browned. Store in tins covered tightly.
