Ingredients:

  1. 2 - red onions, roughly chopped
  2. 2 stalks - celery, roughly chopped
  3. 1 - fennel bulb, fronds and stalks included, roughly chopped
  4. 2 teaspoons - caraway seeds
  5. 2 teaspoons - sea salt
  6. - freshly ground pepper
  7. 1 cups - sliced shitake caps
  8. 4 cloves - large garlic, chopped
  9. 1 - cabbage, roughly chopped
  10. 2 quarts - water
  11. 2 tablespoons - paprika
  12. 2 tablespoons - fresh oregano, chopped
  13. 8 sprigs - parsley, chopped stems and leaves
  14. 1/2 cups - parsley, chopped
  15. - Traditionally fermented sauerkraut (for serving with)
  16. - chopped apples, for serving with

Directions:

1. Combine all ingredients, except for the chopped parsley, in a pot. Add 2 quarts of water.

2. Bring to a boil and then reduce heat. Simmer covered for about 1 hour.

3. Adjust seasoning to taste.

4. Remove whole parsley sprigs and serve topped with some freshly chopped parsley.

5. Serve with a side of traditionally fermented sauerkraut and chopped apples.
