Ingredients:
- 4 - eggs
- 2 tablespoons - half-and-half
- 1/2 teaspoons - salt
- - freshly cracked pepper
- 1 tablespoons - unsalted butter
- 4 tablespoons - pimiento cheese
- 4 teaspoons - pepper jelly
- 4 - warm, split biscuits
Directions:
Whisk together the eggs, half-and-half, salt and pepper in a bowl. In a small saute pan, heat the butter over medium heat. Stir in eggs and cook until just scrambled, about 1-2 minutes.
Spread 1 tablespoon of pimiento cheese on each of the bottom halves of the warm biscuits, and 1 teaspoon pepper jelly on the top halves of each one.
Spoon eggs on bottom halves and cover with top halves.
