Down-Home Biscuit Sandwiches

Ingredients:

  1. 4 - eggs
  2. 2 tablespoons - half-and-half
  3. 1/2 teaspoons - salt
  4. - freshly cracked pepper
  5. 1 tablespoons - unsalted butter
  6. 4 tablespoons - pimiento cheese
  7. 4 teaspoons - pepper jelly
  8. 4 - warm, split biscuits

Directions:

Whisk together the eggs, half-and-half, salt and pepper in a bowl. In a small saute pan, heat the butter over medium heat. Stir in eggs and cook until just scrambled, about 1-2 minutes.

Spread 1 tablespoon of pimiento cheese on each of the bottom halves of the warm biscuits, and 1 teaspoon pepper jelly on the top halves of each one.

Spoon eggs on bottom halves and cover with top halves.
