Devi's Vegetable Beef Soup

Ingredients:

  1. 1 pounds - cooked ground beef
  2. 1 cans - each of these vegetables: carrots, green beans, kidney beans, corn, and potatoes including juice from cans
  3. 1 - large can diced tomatoes
  4. 8 ounces - tomato sauce
  5. 1 cans - (small) tomato paste
  6. 1 cans - (large) beef broth
  7. 1 - medium chopped onion
  8. - salt and pepper to taste
  9. 1 tablespoons - oregano
  10. 2 teaspoons - basil
  11. 2 - bay leaves optional
  12. 1 dashes - red pepper flakes
  13. - sour cream, diced green onion, or Parmesan cheese for serving with, optional
  14. - Herbed Pita Chips for serving with, optional

Directions:

Cut canned potatoes into quarters.

Combine above ingredients (except items for serving with) in a large soup pot.

Heat on medium heat until cooked through. I am generous with the seasonings except for the red pepper flakes; the measurements above are just to get you started.

Serve soup with a dollop of sour cream and diced green onions or a spoon of Parmesan cheese.
