Delicious Fish Chowder

Ingredients:

  1. 2 tablespoons - butter or margarine
  2. 3/4 cups - thinly sliced onions
  3. 1/2 cups - diced celery
  4. 2 cups - diced raw potatoes
  5. 1/2 cups - sliced carrots
  6. 1 1/2 teaspoons - salt
  7. 1/8 teaspoons - pepper
  8. 2 cups - boiling water
  9. 1 pounds - uncooked fish fillets (haddock, sole or halibut) cut into bite-size pieces
  10. 2 cups - milk
  11. - chopped parsley for garnish

Directions:

In a large heavy saucepan melt butter or margarine.

Add onions and celery and cook, stirring frequently, until transparent.

Add potatoes, carrots, salt, pepper and water. Bring to a boil. Cover and simmer until vegetables are tender, about 15 minutes.

Add diced fish fillets, cover and simmer 10 minutes longer.

Add milk; heat, but do not allow to boil, until heated through. Season to taste.

Serve garnished with chopped parsley.
