Prepare the crust:

In a medium-sized bowl, combine the graham cracker crumbs, melted butter, and sugar. Mix until the crumbs are evenly coated.

Press the mixture firmly into the bottom of a 9-inch (23 cm) springform pan or tart pan to form an even crust.

Place the pan in the freezer for 10 minutes to set while you prepare the filling.

Make the cheesecake filling:

In a large mixing bowl, beat the softened cream cheese with a hand mixer or stand mixer until smooth and creamy.

Add the sour cream, heavy cream, sugar, vanilla extract, and lemon juice. Beat until fully incorporated and smooth.

In a small bowl, dissolve the gelatin in hot water. Let it cool slightly but remain liquid.

With the mixer on low speed, gradually pour the dissolved gelatin into the cream cheese mixture and continue to mix until fully combined.

Assemble the cheesecake:

Remove the crust from the freezer and pour the cheesecake filling over the crust. Use a spatula to smooth the top and make it even.

Refrigerate the cheesecake for at least 4-6 hours, or preferably overnight, until it is fully set.

Prepare the berry topping:

In a small bowl, toss together the strawberries, blueberries, and raspberries with the sugar and lemon zest. Let the berries sit for 10 minutes to release their juices.

Serve:

Once the cheesecake has set, remove it from the springform pan and place it on a serving platter.
