Ingredients:

  1. - Lime Wedge
  2. 5 ounces - Maine Root Ginger Beer chilled
  3. 1 teaspoons - Ginger-Lime Syrup see below
  4. 2 ounces - Gosling's Black Seal Rum
  5. 1/2 cups - Fresh Ginger grated
  6. 1 cups - Water
  7. 1 cups - Demerara Sugar
  8. 1 - Zest of 1 Lime

Directions:

For the drink:
Fill a tall glass with ice cubes. Squeeze lime wedge over ice and toss wedge in. Pour in ginger beer. Add ginger-lime simple syrup and stir. Float rum on top.

Ginger-Lime Syrup:
In a small pan, combine grated fresh ginger, water and Demerara sugar and the zest of one lime. Simmer on low until reduced to about 1/3 cup thick, glossy syrup. Strain and discard solids. Let cool.
