Dandelion Greens with Daikon and Shitake Mushrooms

Ingredients:

  1. 2 bunches - dandelion greens stems trimmed
  2. 1 - daikon radish cut in half and sliced on the bias, about 1/8-inch thick
  3. 4 - large shitake mushrooms sliced
  4. 1 tablespoons - safflower oil
  5. 2 tablespoons - tamari
  6. - pepper to taste

Directions:

Heat oil in a skillet over medium high heat and add daikon and mushrooms; then saute for about 2-3 minutes.

Add tamari and greens; then saute for 1 more minute. Season with pepper and serve.
