Ingredients:
- 1 cans - full fat coconut milk
- 2 1/4 cups - non-dairy milk (such as unsweetened vanilla almond milk)
- 1 1/2 cups - vegan powdered white sugar (Or maple syrup to taste)
- 1/4 teaspoons - ground vanilla bean (OR pure vanilla extract to taste)
- 1 1/2 tablespoons - arrowroot powder
- 1 tablespoons - coconut flour
- 4 tablespoons - water
Directions:
Pour coconut milk, non-dairy milk, sugar and vanilla into a large sauce pan (large enough to have extra room to avoid boiling over). Heat over medium heat and bring to a light boil, whisking frequently.
Once mixture is gently boiling, reduce heat to low and allow to cook for an hour, allowing liquids to reduce (and mixture to thicken and become condensed). Stir occasionally, and keep an eye on it to be sure it doesn't boil over at any point.
In a separate cup or bowl, mix together the arrowroot powder with half of the water to create a slurry; after original mixture has cooked for an hour, stir this slurry into the saucepan with a whisk to blend ingredients well. Remove from heat and allow to sit for 5 minutes to thicken.
The mixture should look a little glossy and thick at this point. Make another slurry by mixing the coconut flour with the other half of the water, and pour this mixture into the saucepan, once again using the whisk to combine mixture until thoroughly blended.
Pour into a glass container and allow to cool to room temperature; store in fridge or use immediately in your favorite recipe.
