Dairy-free, Gluten-free Thumbprint Cookies

Ingredients:

  1. 1/4 cups - maple syrup
  2. 1/4 cups - brown rice syrup
  3. - fruit-sweetened jam of your choice
  4. 1 cups - rolled oats
  5. 1 cups - almonds
  6. 1 cups - spelt flour
  7. 1/2 cups - applesauce

Directions:

Preheat oven to 350 degrees F.

Combine oats and almonds in a blender or food processor and blend until they have the consistency of flour.

Add to a large bowl with the spelt flour.

In a small bowl, mix together the oil, maple syrup and brown rice syrup. Combine wet and dry ingredients and mix well.

By hand, make 1-inch balls from the dough and press flat onto a cookie sheet.

Make an indentation with your thumb into the center of each cookie. Fill each cookie with a teaspoon of jam.

Bake at 350 for 15 minutes; cool and enjoy!
