Dairy Free Almond Apple Pancakes

Ingredients:

  1. 1 - egg
  2. 1 1/2 cups - almond or rice milk
  3. 1/4 cups - applesauce
  4. 1 3/4 cups - oat or whole wheat pastry flour
  5. 1/2 cups - almonds, finely chopped
  6. 1 tablespoons - aluminum-free baking powder
  7. 1/2 teaspoons - sea salt

Directions:

1. Mix egg, milk and applesauce in a medium-size bowl.

2.Mix flour, almonds, baking powder and salt in a small bowl.

3. Combine dry ingredients into the wet ingredients.

4. Mix until dry ingredients are moistened.

5. Using a 1/4 – 1/2 cup measuring cup drop pancake batter onto a lightly oiled skillet and cook until golden brown on both sides.

6. Serve warm with maple syrup or honey.
