Ingredients:
- - salt and freshly ground black pepper
- 1 1/2 cups - broccoli florets
- 1 1/2 cups - carrots chopped
- 1 teaspoons - dried basil
- 3 cloves - garlic minced
- 2 tablespoons - vegetable oil
- 3 tablespoons - red Thai curry paste
- - zest from 1/2 lime
- 1 - yellow onion sliced
- 2 - chicken breasts cut into cubes
- 1 1/4 cups - coconut milk
- 1/4 cups - chicken stock
- 1 cans - diced tomatoes 14 ounces
- - lime wedges for squeezing
Directions:
Add ALL INGREDIENTS at the same time into the 12" Gourmet Skillet With Lid. Stir and make sure everything is well mixed. Put lid on, slide valve to "OPEN", turn Heat to Medium. Wait for "Whistle". Close valve; reduce heat to low for 20 minutes!
That's it! You're ready to eat.
