Curry Chicken with Vegetables

Ingredients:

  1. - salt and freshly ground black pepper
  2. 1 1/2 cups - broccoli florets
  3. 1 1/2 cups - carrots chopped
  4. 1 teaspoons - dried basil
  5. 3 cloves - garlic minced
  6. 2 tablespoons - vegetable oil
  7. 3 tablespoons - red Thai curry paste
  8. - zest from 1/2 lime
  9. 1 - yellow onion sliced
  10. 2 - chicken breasts cut into cubes
  11. 1 1/4 cups - coconut milk
  12. 1/4 cups - chicken stock
  13. 1 cans - diced tomatoes 14 ounces
  14. - lime wedges for squeezing

Directions:

Add ALL INGREDIENTS at the same time into the 12" Gourmet Skillet With Lid. Stir and make sure everything is well mixed. Put lid on, slide valve to "OPEN", turn Heat to Medium. Wait for "Whistle". Close valve; reduce heat to low for 20 minutes!
That's it! You're ready to eat.
