Ingredients:

  1. 2 cans - coconut milk
  2. 1/2 jars - small jar curry paste (red, green or yellow) or 1 full jar, as desired for taste
  3. - juice of 1-2 limes
  4. 2 tablespoons - fish sauce
  5. - shrimp, scallops, or chicken
  6. - pork, beef or lamb
  7. - hard boiled eggs
  8. - broccoli, green peppers, or snow peas
  9. - sugar snap peas or cauliflower
  10. - spinach, chard, or onion
  11. - green beans
  12. - red peppers or pineapple
  13. - eggplant, mushrooms, or onion
  14. - zucchini or sweet potato
  15. - sweet potato, onion, or cabbage
  16. - yellow peppers, orange peppers, or carrots
  17. - pineapple, cauliflower or mushrooms
  18. - basil, cilantro, or scallions
  19. - almonds, cashews, or raisins

Directions:

This Whole9 special bonus dinner helps you make an unlimited number of delicious meals.

In a medium bowl, mix together the ingredients for the Curry Base and set aside.

Thoroughly cook your protein of choice in the cooking fat of your choice in a skillet; set aside.

Chop the veggies you have on hand (from the options above) and add to the curry base, cooking in a skillet until the veggies are tender. Add the meat and simmer for 3-5 minutes.

Add salt and pepper (and other desired spices) to taste. Top and serve!
