Curried Eggs

Ingredients:

  1. 2 tablespoons - butter
  2. 2 tablespoons - flour
  3. 1 1/4 cups - milk
  4. 3/4 cups - chopped mushrooms
  5. 1/2 teaspoons - curry powder or more, to taste
  6. 1 cups - half-and-half
  7. 3 - hard-boiled eggs sliced
  8. 1/2 cups - grated sharp cheddar cheese
  9. - salt and pepper to taste

Directions:

Melt butter in dutch oven. Saute chopped mushrooms; add flour, curry powder, milk and half and half to make white sauce.

Add hard boiled eggs and cheese. Simmer and serve hot over cornbread.
