Ingredients:
- 1 teaspoons - fresh minced ginger
- 1 dashes - crushed red pepper
- 1 - green onion chopped finely
- 1/4 cups - yellow pepper finely chopped
- 2 - handfuls of fresh spinach leaves
- 2 ounces - vermicelli rice noodles
- 1 - chicken or vegetable stock bouillon cube
- 1 - lime halved
- 1 - handful of fresh cilantro and basil chopped
Directions:
In a large heatproof bowl, combine all ingredients except lime.
Boil fresh water in another container in the microwave (about 5 minutes) or in a kettle.
Pour hot water over the ingredients in the bowl until water just covers everything. With a fork, stir until bouillon cube is dissolved.
Let soup rest for a minute, then squeeze lime over top and enjoy!
