Cup of Noodles Soup

  1. 1 teaspoons - fresh minced ginger
  2. 1 dashes - crushed red pepper
  3. 1 - green onion chopped finely
  4. 1/4 cups - yellow pepper finely chopped
  5. 2 - handfuls of fresh spinach leaves
  6. 2 ounces - vermicelli rice noodles
  7. 1 - chicken or vegetable stock bouillon cube
  8. 1 - lime halved
  9. 1 - handful of fresh cilantro and basil chopped


In a large heatproof bowl, combine all ingredients except lime.

Boil fresh water in another container in the microwave (about 5 minutes) or in a kettle.

Pour hot water over the ingredients in the bowl until water just covers everything. With a fork, stir until bouillon cube is dissolved.

Let soup rest for a minute, then squeeze lime over top and enjoy!
