Cucumber Roulades

Ingredients:

  1. 1 - seedless cucumber, peeled
  2. 1/4 cups - softened cream cheese
  3. 1 ounces - smoked salmon, thinly sliced, cut into 12 pieces
  4. 12 sprigs - fresh dill

Directions:

CUT cucumber crosswise into 12 slices. Use a melon baller to scoop out indentation in center of each cucumber round.

FILL evenly with cream cheese spread. Top with salmon and dill.  Add a little shaving of carrot for decoration.
