Ingredients:
- 2 - cucumbers peeled
- 1 cups - fresh blueberries
- 1 tablespoons - white balsamic vinegar
- 2 tablespoons - grapeseed or avocado oil
- - pinch of sea salt
- 1/2 cups - feta cheese crumbles optional
Directions:
Cut peeled cucumbers lengthwise. If there are mature seeds, scoop them out with a spoon. If the seeds are immature, you can leave them in.
Slice cucumbers crosswise into ¼ inch slices. Place in a serving bowl.
Add blueberries and gently toss. You want the blueberries to stay unbroken.
Make the dressing: Combine the vinegar, oil and salt in a jar. Shake well until combined.
Pour the dressing over the cucumbers and blueberries and gently toss to coat. Serve immediately or refrigerate until ready to serve.
Sprinkle feta on top when serving, if using.
