Crustless Zucchini Quiche

    If like a crust use a pie shell or Pillsbury crescent rolls - spread with fingers to cover dish. Than spread 2 t. yellow mustard over before adding filling. Adds a special flavor. Excellent! Excellent! Double & put in 9 x 13 dish.

Ingredients:

  1. 8 slices - Bacon (optional)
  2. 2 tablespoons - butter melted
  3. 1/4 cups - onion chopped
  4. 1/2 cups - flour
  5. 4 cups - zucchini (or more) thinly sliced
  6. 1/4 teaspoons - pepper
  7. 1/4 teaspoons - basil leaves best if fresh
  8. 2 cups - (8 oz) mozzarelle cheese shredded
  9. 8 ounces - Swiss Cheess shreded or slices
  10. 4 - eggs beaten
  11. 1 teaspoons - salt
  12. 1 1/2 cups - milk
  13. 1 tablespoons - parsley flakes best fresh
  14. 1/4 teaspoons - garlic powder or 1 fresh clove
  15. 1/4 teaspoons - oregano leaves best fresh

Directions:

Cook bacon & crumble.
Preheat oven to 350 degrees. Lightly grease large size pir plate or square Pyrex bowl.
Line bottom of dish with Swiss cheese & bacon.
Combine remaining ingredients, beat or whisk until smooth. Pour over Swiss cheese.
Bake 35 minutes or until set.
