Ingredients:
- 2 pounds - sweet potatoes (about 4 medium)
- 1/2 cups - skim milk
- 1 tablespoons - sugar-free maple syrup
- 1/2 cups - brown sugar
- 2 - eggs
- 1 tablespoons - light margarine, softened
- 1 teaspoons - cinnamon
- 1 teaspoons - vanilla extract
Directions:
Preheat oven to 400 degrees F. Coat a 9-inch pie plate with cooking spray.
Place potatoes on a baking sheet and bake 50 to 60 minutes, or until tender. Let potatoes cool for 10 minutes, then scoop out pulp and place in a large bowl.
Add remaining ingredients to bowl; beat with an electric mixer until smooth. Pour mixture into pie plate. Reduce oven to 350 degrees F.
Bake 45 to 50 minutes, or until knife inserted in center comes out clean. Let cool, then cover and refrigerate until ready to serve.
