Ingredients:
- 16 ounces - canned pure pumpkin
- 1 - medium egg beaten
- 1 tablespoons - ground cinnamon or to taste
- 1 tablespoons - pumpkin pie spice or to taste
- 1 tablespoons - honey level tbsp.
- 1/4 cups - stevia
- - low-calorie cooking spray
- 2 - whole honey graham crackers crushed
- - spray butter
Directions:
1. Preheat oven to 350° F. Mix all of pie ingredients together (except cooking spray).
2. Spray a small loaf pan or 8-by-8-inch baking pan with low-calorie cooking spray and pour in the pie mixture.
3. Bake for 50-60 minutes, or until a knife inserted into the middle comes out clean.
4. Let the pie cool before serving.
For optional crust:
Place crushed graham crackers in bottom of pan; spray with some spray butter to act as a binder. Pour pie filling ingredients over the crust and bake as directed above. (Add additional 1.50 Syns per serving).
