Crustless Crab Quiche

Ingredients:

  1. 1/2 cups - chopped onion
  2. 1 pounds - mushrooms chopped
  3. 2 tablespoons - butter
  4. 4 - eggs
  5. 1 cups - sour cream
  6. 1 cups - small curd cottage cheese
  7. 1 cups - freshly grated Parmesan cheese
  8. 1/4 cups - flour
  9. 4 drops - hot red pepper sauce
  10. 2 cups - shredded Monterey Jack cheese
  11. 6 ounces - crabmeat drained

Directions:

Preheat oven to 350 degrees F. In a large saucepan, saute onions and mushrooms in butter.

In a mixing bowl combine eggs, sour cream, cottage cheese, Parmesan, flour and pepper sauce. Add mushroom and onion mixture, Monterey Jack cheese and crab meat. Stir to combine.

Pour mixture into buttered 10-inch quiche dish and bake 40 minutes until golden brown. Let stand 15 minutes before serving.
