Crunchy Onion Chicken

Ingredients:

  1. 2 cups - french fried onions
  2. 2 tablespoons - flour
  3. 4 - boneless chicken breasts 5 oz. each
  4. 1 - egg beaten
  5. - salt & pepper
  6. - flour for dredging

Directions:

Crush french fried onions in a plastic bag and combine with 2 tablespoons of flour; mix well. Pour out onto large plate.
Place extra flour into bowl or medium plate. Add a little salt & pepper and stir.
Dip chicken breasts into flour to coat, then dip into beaten egg, and lastly coat with the fried onion mixture.
Place on greased baking sheet (or line baking sheet with aluminum foil sprayed with baking spray or some parchment paper). Bake at 400° F for 20 minutes or until chicken reaches 160° F internal temperature.
