Crunchy Banana-Nut Balls

Ingredients:

  1. 1 cups - Cashews or Almonds Food process until pea-sized
  2. 1 cups - Pecans or Walnuts Food process until pea-sized
  3. 1 cups - Roasted pumpkin seeds Food process until pea-sized
  4. 1 cups - Dried banana chips Food process until pea-sized
  5. 3/4 cups - Coconut oil
  6. 8 ounces - Dark chocolate

Directions:

Food process nuts and banana chips until pea-sized. Add oil, mix with processor. Grease hands and shape mixture into bite-sized balls. Place morsels on tray and freeze. Melt chocolate and dip the frozen balls. Place back onto tray and freeze until ready to serve. Allow time to thaw at room temperature before eating. Makes 3 dozen 1 Tbsp morsels.
