Ingredients:
- 75 grams - plain wholemeal flour
- 50 grams - porridge oats
- 25 grams - mixed nuts chopped
- 25 grams - mixed seeds e.g. sunflower, pumpkin, flax
- 50 grams - coconut oil solid
- 1 tablespoons - honey runny
Directions:
Preheat oven to 200C (180C with fan).
Line a baking tray with baking paper.
Put the flour, oats, nuts and seeds in a bowl and rub in the coconut oil for about 5 minutes, or until the mixture comes together into loose, damp clumps.
Add the honey and bring the dough together.
Divide into 8 portions and roll into balls.
Flatten the balls into cookie shapes and place on the baking tray.
Bake for 12-15 minutes or until nicely browned (the cookies will become crisp and crunchy as they cool down).
