Crockpot Mexican Pork Stew

Ingredients:

  1. 4 - boneless pork loin chops
  2. 1 - onion chopped
  3. 3 cloves - garlic minced
  4. 1 cans - pinto beans rinsed, drained, 15 oz.
  5. 1 cans - black beans rinsed, drained, 15 oz.
  6. 1 cans - diced tomatoes undrained, 14 oz.
  7. 1 jars - taco sauce 8 oz.
  8. 1 tablespoons - chili powder
  9. 1/8 teaspoons - cayenne pepper
  10. 1 cups - water
  11. 2 tablespoons - corn starch
  12. - cooked rice or couscous for serving with

Directions:

• Combine all ingredients except cornstarch in crockpot.

• Cover and cook on low for 8-9 hours.

• Remove pork chops and cut into small strips.

• Mix cornstarch and some water until smooth.

• Add cornstarch to crockpot and stir well.

• Return meat to crockpot.

• Cover and cook for 30 more minutes.

• Stir and serve over rice or couscous.
