Ingredients:
- 4 - boneless pork loin chops
- 1 - onion chopped
- 3 cloves - garlic minced
- 1 cans - pinto beans rinsed, drained, 15 oz.
- 1 cans - black beans rinsed, drained, 15 oz.
- 1 cans - diced tomatoes undrained, 14 oz.
- 1 jars - taco sauce 8 oz.
- 1 tablespoons - chili powder
- 1/8 teaspoons - cayenne pepper
- 1 cups - water
- 2 tablespoons - corn starch
- - cooked rice or couscous for serving with
Directions:
• Combine all ingredients except cornstarch in crockpot.
• Cover and cook on low for 8-9 hours.
• Remove pork chops and cut into small strips.
• Mix cornstarch and some water until smooth.
• Add cornstarch to crockpot and stir well.
• Return meat to crockpot.
• Cover and cook for 30 more minutes.
• Stir and serve over rice or couscous.
