Crockpot Italian Chicken and Vegetables

Ingredients:

  1. 4 - boneless skinless chicken breasts defrosted
  2. 16 ounces - Italian dressing
  3. 1/2 cups - Parmesan cheese (optional)
  4. 4 - potatoes scrubbed, cut in half or wedges
  5. - Italian seasoning

Directions:

Spray crockpot with Pam. Pour a small amount of Italian dressing into the crockpot, then place two chicken breasts in crockpot. Pour another small amount of Italian dressing, half of cheese and some Italian seasoning onto chicken breasts. Add remaining chicken breasts (if possible, not on directly on top of first two). Season these as previously directed. Pour carrots on top of chicken breasts, then add more Italian dressing. Place potatoes on top of carrots, then add remaining Italian dressing and more Italian seasoning. (If the Italian dressing doesn't seem to be enough liquid, consider adding some water.) Cook on low for 6-8 hours or high for 4 hours.
