Crock Pot Italian Chicken with Tomatoes

Ingredients:

  1. 1 pounds - boneless skinless chicken breasts, thawed
  2. 1 - green bell pepper, chopped
  3. 1/2 - yellow onion, chopped
  4. 2 cloves - garlic
  5. 1 cans - diced tomatoes, drained
  6. 1 cans - tomato sauce
  7. 3 tablespoons - red wine vinegar
  8. 1 tablespoons - Italian seasoning (or a mix of basil, rosemary, oregano, marjoram and thyme)
  9. 1/4 teaspoons - crushed red pepper flakes
  10. 1/2 teaspoons - salt
  11. 1/4 teaspoons - freshly cracked pepper
  12. 1/2 cups - shredded mozzarella cheese or small chunks of fresh mozzarella
  13. 1 boxes - whole grain pasta, cooked al dente and drained
  14. 2 tablespoons - fresh parsley or basil, chopped, optional

Directions:

Place chicken in slow cooker. Add remaining ingredients and seasonings, except mozzarella, pasta and herbs. Stir ingredients gently to combine flavors.

Cover and cook on low for 6-8 hours, or high for 3-4 hours.

Once cooked, remove chicken and slice into bite-sized pieces (or cut easily inside crockpot, if preferred). Add back to slow cooker. Serve heaping spoonfuls on top of cooked pasta and sprinkle mozzarella on top, if desired.

If desired, sprinkle with fresh parsley or basil.
