Crispy Bacon with Scrambled Eggs

  1. 4 slices - bacon
  2. 2 - eggs
  3. - grated cheese, herbs, chopped veggies optional


Set a bowl on a plate and drape the bacon slices over the bowl; cover with a paper towel and cook in microwave on High heat for 2-4 minutes until cooked through and crispy.

Meanwhile, in a bowl, beat eggs lightly with a fork; cook in microwave in 30-second intervals, stirring each time, until cooked through. (If adding any chopped veggies or herbs, mix in with eggs before cooking. Stir in cheese, if using, after cooking eggs).
