Crisp Cucumber Salad

Ingredients:

  1. 2 - medium cucumbers (about 1 pound) peeled in alternating lengthwise strips and sliced thin
  2. 1 - small onion sliced thin
  3. 1/2 cups - sour cream
  4. 2 tablespoons - sugar
  5. 3 tablespoons - cider vinegar
  6. 3/4 teaspoons - salt
  7. 1/4 teaspoons - dry mustard
  8. 1/4 teaspoons - pepper
  9. 1 tablespoons - minced parsley

Directions:

In serving dish gently toss cucumbers and onion to mix; chill until serving time.

Beat sour cream, sugar, vinegar, salt, mustard and pepper until well blended. Pour over cucumber-onion mixture; sprinkle with parsley and serve at once.
