Crepes Parisienne

Ingredients:

  1. 3 - eggs beaten
  2. 2/3 cups - flour
  3. 1/2 teaspoons - salt
  4. 1 cups - milk
  5. 2 cups - mushroom slices
  6. 1/4 cups - green onion slices
  7. 1/4 cups - margarine
  8. 3 tablespoons - flour
  9. 1/2 teaspoons - salt
  10. 1 dashes - pepper
  11. 1 cups - milk
  12. 2 1/2 cups - cheddar cheese
  13. 1 1/2 cups - chicken cooked and shredded

Directions:

Combine ingredients for crepe batter. Beat until smooth. Let stand 30 minutes.

Saute vegetables in margarine. Blend in flour and seasonings. Gradually add milk, stirring constantly until thickened. Add 1 1/2 cups of cheese, stir until melted. Stir in chicken.

For each crepe, pour 1/4 cup batter into hot, lightly greased skillet. Cook on one side only. Remove from heat. Fill each crepe with about 1/4 cup cheese mixture and roll up. Place crepes in 9x13 pan.

Bake at 350 degrees for 20 minutes. Top with remaining cheese. Continue cooking until cheese melts.
