  • Notes:

    There are multiple types of Wild Rice and blends. Some are all wild rice, some have white or brown rice as first ingredient. Check cooking instructions to see how long they take to cook. I used Royal Blend (first ingredient white rice) and felt it got too soft. I would try Lundberg blend or 100% wild rice next time.

Ingredients:

  1. 1 1/2 pounds - Boneless, skinless chicken thighs 1 Costco package
  2. 2 quarts - Chicken broth
  3. 8 ounces - Baby Bella Mushrooms sliced
  4. 1 1/2 cups - Onion diced
  5. 1 1/2 cups - Carrot diced
  6. 1 1/2 cups - Celery diced
  7. 3 cloves - Garlic minced
  8. 8 tablespoons - Butter
  9. 1 teaspoons - Salt
  10. 1 teaspoons - Sage leaves dried
  11. 1 teaspoons - Rosemary dried, crumbled
  12. 1 teaspoons - Thyme dried
  13. - Black pepper fresh ground
  14. 1 cups - White wine dry
  15. 3 tablespoons - Flour
  16. 1 cups - Wild rice see notes
  17. 1 cups - Cream

Directions:

1. Cook chicken breast in 1 cup broth in Instant Pot for 20 minutes. Let sit 5-10 minutes then release pressure.
2. While chicken is cooking, slice mushrooms, dice onion, carrot, celery and mince garlic.
3. In 5 Tbsp of butter, saute onions and mushrooms with salt until mushrooms have shrunk a bit, about 8 minutes.
4. Add celery, carrot, garlic, herbs and pepper. Saute 4 minutes.
5. Add wine to vegetables, bring to full boil. Move mixture into Instant Pot.
6. Reserving 1 cup, add rest of broth to Instant pot.
7. Melt remaining 3 Tbs butter, stir in flour and cook til slightly brown.
8. Gradually and remaining 1 cup of broth and stir until smooth. Stir into Instant Pot.
9. Add wild rice to Instant Pot.
10. Cook on high pressure for 15 minutes* Turn off the heat and let pressure reduce naturally for 10 minutes the release pressure manually.
11. Test rice for doneness. Cook on Saute longer as needed. Taste for seasoning.
12. Once rice is done, turn stir in cream.
