Creamy Tuscan Garlic Chicken

Ingredients:

  1. 2 tablespoons - olive oil
  2. 1 cups - heavy cream
  3. 1/2 cups - chicken broth
  4. 1 teaspoons - garlic powder (OR 1 clove, minced)
  5. 1 teaspoons - Italian seasoning
  6. 1/2 cups - Parmesan cheese
  7. 1 cups - spinach chopped
  8. 1/2 cups - sundried tomatoes
  9. - cooked pasta optional, for serving with
  10. 3 - or 4 boneless chicken breasts thinly sliced

Directions:

Note: Double the amount of sauce, if serving over pasta and like lots of sauce.

1. In a large skillet, add olive oil and cook chicken for 3-5 minutes on each side or until no longer pink; remove and set aside.

2. Add cream, chicken broth, garlic, Italian seasoning and Parmesan cheese to skillet. Whisk over medium heat until it starts to thicken.

3. Add the spinach and sundried tomatoes and let simmer until spinach starts to wilt. Add chicken back to pan and keep warm.

Serve over pasta, if desired.
