Ingredients:
- 5 cups - Onions chopped
- 1/4 cups - Sherry
- 1/2 tablespoons - Basil
- 1/2 gallons - Water
- 1/4 cups - Chicken Base
- 1/2 pounds - Butter
- 1 cups - Flour
- 1/2 gallons - Milk
Directions:
Chop onions and saute in large stock pot with 2 tbls of butter, until tender
Add Sherry and basil, simmer 5 minutes
Add water and bring to a boil, add chicken base
In saucepan, melt butter, slowly add flour to make roux (mix butter and flour together until paste) until all flour is used
When water is boiling, slowly whip roux in small amounts until all roux is used, mixture should be thick. Let simmer 5 minutes. Heat milk and slowly whip into thickened soup
Add croutons and shredded swiss cheese to bowl of soup, heat, eat and enjoy
I use bagel chips instead of the croutons. We like it much better that way. You buy them in small bags in the cracker aisle at your supermarket
