Creamy-Rich Caramels

Ingredients:

  1. 2 cups - sugar
  2. 1 1/2 cups - Pream or Coffeemate creamer
  3. 1/2 cups - butter
  4. 3/4 cups - dark corn syrup
  5. 1/4 teaspoons - salt
  6. 1 cups - water
  7. 1 cups - chopped nuts optional

Directions:

Combine sugar and Pream (or Coffeemate) in saucepan. Add butter, corn syrup, salt and water; cook over medium heat stirring frequently as mixture thickens, constantly as it darkens.

Cook to 244 degrees F or until a little bit dropped in cold water forms a firm ball.

Sprinkle 1/2 cup of chopped nuts over bottom of greased 8-inch square pan. Pour caramel mixture over top, and sprinkle remaining 1/2 cup of chopped nuts on top.

When cooled completely, cut into squares and wrap individually.
