Creamy Cauliflower Soup

Ingredients:

  1. 2 tablespoons - Olive Oil
  2. 2 cloves - Garlic Chopped
  3. 2 cups - Onion Chopped
  4. 1/2 teaspoons - Sea Salt
  5. 1 heads - Cauliflower
  6. 6 cups - Vegetable Broth
  7. 1 cups - Cashew or Almond Milk
  8. 3 tablespoons - *Chives Chopped
  9. - *Nutmeg Grated
  10. - * Use either chives or nutmeg, not both

Directions:

Sauté onion, garlic and salt in olive oil till the onions are soft and translucent. Add the cauliflower and continue cooking for A couple of minutes. Add the rest of the ingredients and adjust the heat to bring it to a simmer, cover and cook till cauliflower is very soft (about 30 minutes). Blend till very smooth and serve with either chopped chives sprinkled on top or a grating of nutmeg.
