Creamed Spinach

Ingredients:

  1. 3 tablespoons - butter
  2. 4 tablespoons - flour
  3. 1 1/4 teaspoons - salt
  4. 1 cups - whole milk
  5. 2 tablespoons - butter
  6. 2 tablespoons - onion minced
  7. 1/4 cups - water
  8. 20 ounces - frozen spinach chopped
  9. 1/2 cups - sour cream can be low fat
  10. 1/4 cups - Parmesan cheese

Directions:

Melt 3 Tbsp. butter in small saucepan over medium-low heat. Stir in flour and salt until creamed together. Stir in milk a little at a time. Increase the heat to medium, and stir constantly with a whisk until mixture is thick and smooth.

Remove from heat and set aside.

Melt 2 Tbsp. butter in a 2 quart saucepan over medium heat; add onions and cook until transparent. Add spinach and water to pan, lower the heat and cover. Stir several times and cook until spinach is almost completely cooked.

When spinach is almost done, add cream sauce, sour cream and Parmesan cheese. Stir well and simmer until completely blended.
