Creamed Kale

Ingredients:

  1. 2 1/2 bunches - kale
  2. 1 - onion diced
  3. 5 cloves - garlic
  4. 1 1/2 cups - cottage cheese
  5. 1/2 cups - Parmesan cheese
  6. 2 tablespoons - butter

Directions:

Wash kale, remove from stems, and chop.

Bring up 3 cups of water to a boil; add salt. Add kale, and turn down to medium heat to cook for 10 minutes.

While that is cooking, saute onion and garlic in butter until butter is fragrant or garlic and onions are translucent.

After 10 minutes, drain kale and make sure all water is squeezed out of kale.

Add Parmesan and cottage cheese to food processor and process until smooth. Add kale and onion with garlic and butter to processor and process to the consistency you want.

Serve hot with more Parmesan cheese on top.
