Ingredients:
- 6 - potatoes, peeled
- 1 tablespoons - butter
- 4 - green onions, chopped
- 2 1/2 tablespoons - flour
- 3 tablespoons - butter
- 42 ounces - chicken broth
- 5 ounces - potato water
- 8 ounces - sour cream
- 1 1/4 cups - half & half
- - salt and pepper
- 1/2 cups - grated cheddar cheese
- 5 slices - bacon, cooked and broken into pieces
Directions:
Cut potatoes into 3rds, boil, drain and save 5-6 oz. potato water; set potatoes aside. Melt 1 T butter in kettle; add onions and cook until tender. Mix flour with 3 T melted buyer to form a paste. Add chicken broth to onions; stir flour/butter paste into mixture with wire whisk. Mash potatoes manually. Add potatoes to kettle. Add potato water; simmer 10 minutes. Add sour cream half & half, salt & pepper. Heat, but do not boil Serve garnished with cheese and bacon.
