Cranberry Nut Bread

Ingredients:

  1. 2 cups - all-purpose flour
  2. 1 cups - sugar
  3. 1 1/2 teaspoons - double-acting baking powder
  4. 1 teaspoons - salt
  5. 1/2 teaspoons - baking soda
  6. 1 sticks - cold unsalted butter cut into bits
  7. 1 teaspoons - freshly grated orange zest
  8. 3/4 cups - fresh orange juice
  9. 1 - large egg
  10. 1 cups - coarsely chopped cranberries
  11. 1/3 cups - coarsely chopped walnuts
  12. 1 1/2 cups - confectioners' sugar
  13. 1 teaspoons - grated orange peel
  14. 6 teaspoons - orange juice
  15. - additional chopped walnuts

Directions:

In a food processor or in a bowl with a pastry blender, blend together the flour, sugar, baking powder, salt, baking soda and butter until mixture resembles meal; transfer mixture to a large bowl.

In a small bowl whisk together the zest, juice, and egg; add the mixture to the flour mixture and stir batter until it is just combined.

Stir in cranberries and walnuts and transfer batter to a well-buttered 9-by-5-inch loaf pan.

Bake the bread in the middle of a preheated 350 degrees F oven for 1 hour, 15 minutes or until a tester comes out clean.

Let bread cool in pan for 15 minutes and turn out onto a rack.

For Orange Glaze:
Combine confectioners' sugar, orange peel and orange juice in a small bowl. Stir with spoon to blend.

Spoon over top of cooled loaves, letting excess glaze run down the sides. Sprinkle with nuts before glaze hardens.
