Ingredients:
- 2 cups - all-purpose flour
- 1 cups - sugar
- 1 1/2 teaspoons - double-acting baking powder
- 1 teaspoons - salt
- 1/2 teaspoons - baking soda
- 1 sticks - cold unsalted butter cut into bits
- 1 teaspoons - freshly grated orange zest
- 3/4 cups - fresh orange juice
- 1 - large egg
- 1 cups - coarsely chopped cranberries
- 1/3 cups - coarsely chopped walnuts
- 1 1/2 cups - confectioners' sugar
- 1 teaspoons - grated orange peel
- 6 teaspoons - orange juice
- - additional chopped walnuts
Directions:
In a food processor or in a bowl with a pastry blender, blend together the flour, sugar, baking powder, salt, baking soda and butter until mixture resembles meal; transfer mixture to a large bowl.
In a small bowl whisk together the zest, juice, and egg; add the mixture to the flour mixture and stir batter until it is just combined.
Stir in cranberries and walnuts and transfer batter to a well-buttered 9-by-5-inch loaf pan.
Bake the bread in the middle of a preheated 350 degrees F oven for 1 hour, 15 minutes or until a tester comes out clean.
Let bread cool in pan for 15 minutes and turn out onto a rack.
For Orange Glaze:
Combine confectioners' sugar, orange peel and orange juice in a small bowl. Stir with spoon to blend.
Spoon over top of cooled loaves, letting excess glaze run down the sides. Sprinkle with nuts before glaze hardens.
