Cranberry Muffins

Ingredients:

  1. 2 cups - flour
  2. 1 cups - white sugar
  3. 1 1/2 teaspoons - baking powder
  4. 1/2 teaspoons - baking soda
  5. 1/2 teaspoons - salt
  6. 1/4 cups - shortening
  7. 1 - egg well beaten
  8. 3/4 cups - orange juice
  9. 1 tablespoons - dried orange rind
  10. 1 cups - to 2 cups cranberries
  11. 1/2 cups - chopped walnuts or pecans

Directions:

Sift together the first 5 ingredients. Cut in shortening until mixture resembles coarse cornmeal.

Combine orange juice and orange rind with well-beaten egg. Pour into dry ingredients all at once; mix just enough to dampen. Fold in nuts and berries.

Fill muffin cups ¾ full. Bake in 400 degrees F oven for 20-25 minutes.
