Cranberry Ginger Compote

Ingredients:

  1. 1 cups - apple juice (no sugar added)
  2. 1 3/4 cups - light brown sugar
  3. 12 ounces - fresh cranberries
  4. 2 - Bosc pears
  5. 1 tablespoons - grated peeled fresh ginger
  6. 1 teaspoons - ground cardamom
  7. 1 teaspoons - ground cinnamon
  8. dashes - sea salt

Directions:

Combine juice and sugar in a heavy saucepan. Bring to a boil; add cranberries, diced pear, ginger and seasonings; return to a boil.

Reduce heat, cover and cook gently for 10 minutes, stirring occasionally. Cover and cool completely at room temperature.

Refrigerate until serving time. Keeps, chilled, for one week.
