Ingredients:
- 3 cups - rolled oats
- 1/2 cups - wheat germ
- 1/4 cups - ground flaxseed
- 1/4 teaspoons - kosher salt
- 3/4 cups - sliced almonds
- 1/4 cups - maple syrup
- 1/4 cups - coconut oil
- 4 teaspoons - pure vanilla extract
- 1/2 cups - dried cranberries or cherries or other fruit as desired
Directions:
1. Heat oven to 350° F. Line a sheet pan with parchment paper or aluminum foil (spray foil with cooking spray).
2. In a bowl combine oats, wheat germ, flaxseed, salt and almonds.
3. In a saucepan, combine maple syrup, coconut oil, and vanilla extract. Heat until oil melts. Combine with oat mixture until well coated.
4. Spread mixture onto sheet pan in an even layer and bake until crisp and golden, about 15-18 minutes, stirring occasionally.
5. After granola has cooled, stir in dried cherries or fruit, as desired.
6. Transfer to airtight container; store up to 1 month.
