Cowboy Chili

Ingredients:

  1. 5 pounds - Chili meat
  2. 12 cups - water I use less - about 8
  3. 1 1/2 teaspoons - black pepper
  4. 1 teaspoons - Ground Thyme
  5. 1/2 teaspoons - ground Oregano
  6. 1 teaspoons - ground cumin
  7. 1 teaspoons - Crushed red pepper
  8. 2 teaspoons - granulated garlic
  9. 2 tablespoons - minced onion (dry)
  10. 2 tablespoons - Salt
  11. 5 tablespoons - Chili powder
  12. 4 tablespoons - cornstarch

Directions:

In a large pot, brown the meat. Add chili powder and stir into the browning meat as it becomes brown.
Add water and bring to a boil.
Add the remaining spcies and cook 2-3 hours on medium heat with lid on, stirring regularly.
Mix cornstarch in 3 cups of water and pour slowly while stirring into hot chili.
Continue cooking an additional hour on low heat, stirring regularly.
