Couscous Salad

Ingredients:

  1. 3 bags - 5 lb. bags raw couscous
  2. 1 1/2 gallons - water
  3. 6 - cucumbers chopped
  4. 12 - tomatoes chopped
  5. 4 - red onions chopped
  6. 15 cups - garbanzo beans
  7. 4 cups - mint
  8. 13 1/2 teaspoons - lemon juice between 12 & 15 tsps, to taste
  9. 1 cups - olive oil

Directions:

1) Add couscous to boiling water and cook for 8-10 minutes stirring occasionally. Drain and let cool.
2) Add remaining ingredients and toss.

Serving size: 1 cup
