Country ham cheesecake

Ingredients:

  1. 6 tablespoons - Butter, melted
  2. 3 cups - Oyster crackers or saltines
  3. 1 cups - Parmesan, grated
  4. 32 ounces - Cream cheese, room temp
  5. 7 - Eggs
  6. 2 cups - Swiss cheese, grated
  7. 1 cups - Ham, 1/2 " cubes
  8. 1/3 cups - Chives, minced
  9. 1 teaspoons - Salt
  10. 1/4 teaspoons - White pepper

Directions:

Preheat oven to 300'. Brush a 9" springform pan with 1 Tblsp. Melted butter. Finely crush crackers in a food processor. Mix cracker crumbs , Parmesan and 5 Tblsp. Melted butter in a medium bowl to blend, reserving 1/2 c. Crumb mixture for topping. Press remaining crumbs in the bottom and up sides of the prepared pan. Refrigerate while preparing rest of ingredients. Using a mixer, beat cream cheese and eggs in a large bowl until smooth. Mix in remaining ingredients and pour filling into the crust. Sprinkle reserved crumbs over the top . Place cheesecake on a rimmed baking sheet and bake until filling no longer moves in center when gently shaken...about 2 hrs. Cool 30 minutes. Serve warm or at room temperature.
