Ingredients:
- 6 tablespoons - Butter, melted
- 3 cups - Oyster crackers or saltines
- 1 cups - Parmesan, grated
- 32 ounces - Cream cheese, room temp
- 7 - Eggs
- 2 cups - Swiss cheese, grated
- 1 cups - Ham, 1/2 " cubes
- 1/3 cups - Chives, minced
- 1 teaspoons - Salt
- 1/4 teaspoons - White pepper
Directions:
Preheat oven to 300'. Brush a 9" springform pan with 1 Tblsp. Melted butter. Finely crush crackers in a food processor. Mix cracker crumbs , Parmesan and 5 Tblsp. Melted butter in a medium bowl to blend, reserving 1/2 c. Crumb mixture for topping. Press remaining crumbs in the bottom and up sides of the prepared pan. Refrigerate while preparing rest of ingredients. Using a mixer, beat cream cheese and eggs in a large bowl until smooth. Mix in remaining ingredients and pour filling into the crust. Sprinkle reserved crumbs over the top . Place cheesecake on a rimmed baking sheet and bake until filling no longer moves in center when gently shaken...about 2 hrs. Cool 30 minutes. Serve warm or at room temperature.
